Pineapple Cookies
1 cup brown sugar
1 cup sugar
1 c shortening
2 eggs
1 can crushed pineapple
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
4 cups flour
Drain pineapple as much as possible. Mix all ingredients. Cook at 375 F for 10-15 minutes.
When you put the cookies away, be careful not to stack them unless they are well done, otherwise they will stick together.
***This recipe isn't really new to me, but I haven't had these cookies since I was little. My aunt used to make them. They were always my favorite. They are still as good as I remember them being back then.
I would rate them at 4 stars. (My husband took them to our branch's priesthood session potluck tonight.)
