Challenge Ingredient: Peanut Butter

Sorry about the delay in posting, guys. Janelle did the last few weeks' challenges, and I forgot that this week was mine. So, let's get to talkin' about PEANUT BUTTER.

Here are a few fun facts about PB:

  • PB may protect against a high risk of cardiovascular disease due to high levels of monounsaturated fats and resveratrol
  • PB marketed as Natural, or Organic, may only contain peanuts and salt.
  • PB produced in the United States is exported to countries all over the world. China is also a leading exporter of peanut butter.
  • Plumpy'nut is a peanut butter based food used to fight malnutrition in famine stricken countries. A single pack contains 500 calories, can be stored unrefrigerated for 2 years, and requires no cooking or preparation.
  • A common, simple outdoor bird feeder can be made by coating a pine cone once with peanut butter, then again with birdseed.
  • Peanut butter is an effective bait for mouse traps.
Thanks, Wikipedia.

Here is an interesting recipe I found while searching for a picture to post.

Peanut Butter Snacks

¼-½ cup honey or corn syrup (to taste)
1 cup dry milk
½ cup peanut butter

Combine all the ingredients and roll into 1-inch balls. These can then be rolled in coconut, sunflower seeds, granola or nuts. Store in an airtight container. Makes 1 dozen.

One of my favorite things to make with peanut butter is peanut butter and banana sandwiches. I know... I'm totally weird. But, if they're good enough for Elvis, they're good enough for me.

Although, I've never grilled mine. Hmmm...maybe I'll have to try that.
