Berry Glace Pie

Seriously.

You have to make this pie.

I made it yesterday for our fourth of July celebration and I'm going to the store tomorrow to get more strawberries so I can make another one. That's how good and easy it was.

Here's the recipe! It came from the Better Homes and Gardens New Cookbook.
1 recipe Baked Pastry Shell (or a premade Pillsbury frozen shell. let's be honest, I never make my own pie crust)
8 cups medium strawberries (that's about 2 containers worth)
2/3 cups sugar
2 Tablespoons cornstarch
Several drops red food coloring (optional) (I didn't use any. It looks red enough to me!)
Whipped cream (optional) (in other words, not optional. whipped cream is good)
1. Prepare Baked Pastry Shell and set aside. Meanwhile, remove stems from strawberries. Cut any larg strawberries in half lengthwise; set aside. (next time, aka tomorrow, I'm going to cut the strawberries into smaller pieces.)
2. For glaze, in a blender container or food processor bowl combine 1 cup of the strawberries and 2/3 cup water. Cover and blend or process til smooth. Add enough additional water to the mixture to equal 1 1/2 cups. In a medium saucepan combine sugar and cornstarch; stir in blended berry mixture. Cook and stir over medium heat til mixture is thickened and bubbly. Cook and stir 2 minutes more. If desired, stir in red food coloring. Cool for 10 minutes without stirring.
3. Spread about 1/4 cup of the glaze over bottom and sides of Baked Pastry Shell. Arrange half of the remaining strawberries, stem end down, in the pastry shell.
4. Carefully spoon half of the remaining glaze over fruit, thoroughly covering each piece of fruit. Arrange remaining fruit over first layer. Spoon remaining glaze over fruit, covering each piece. Chill for 1 to 2 hours. (After 2 hours, filling may beging to water out) If desired, garnish with whipped cream. Makes 8 servings.
I would for sure give this 5 stars ***** and take it to a dinner party although it is a bit messy to serve. It was dang good.
