garlic chicken (late)

[i got this recipe at allrecipes.com]

Ingredients:

1/2 cup butter
4 cloves garlic, minced

3/4 cup bread crumbs or cracker crumbs
1/4 tsp. oregano
1/4 tsp. tarragon (they called for parsley but i was out)
1/4 tsp. black pepper

1/2 cup shredded parmesan

up to 8 chicken breasts


Directions:
preheat oven to 350.

melt the butter in a pan, then add your garlic and saute until tender. turn off heat.

meanwhile, pound your chicken breasts flat. (i put them in a ziplock so bits don't fly, and pound away. makes them cook more evenly and more quickly.)

mix the crumbs and spices together. prepare a baking dish by spreading a couple of tablespoons of crumb mixture on the bottom.

dip both sides of the chicken into the garlic butter. little brown bits of garlic will stick to it. then press one side of the chicken into the crumb mixture, and place in the pan, crumb side up.

after all of the chicken is prepared, shake parmesan over the top of them all. drizzle with any extra butter mixture and top with any extra crumbs.

bake for 30 minutes, serve and enjoy!

the recipe site had a lot of comments of ways people adapted this to their preferences. i think once you dunk chicken in garlic butter you CAN'T RUIN IT! a solid winner!

it really was FABULOUS. it will be a permanent addition to our rotation and i would not hesitate to serve it to guests. is that 5 stars then?
