Black Bean Burgers

I found this recipe in a post someone made in a group I am a member of on CafeMom. I thought it looked different and interesting.

Black Bean Burgers

1 can black beans, rinsed/drained, and smashed with fork
1 egg
2 tablespoons salsa
chopped and sauteed onions and green peppers
1/2 cup bread crumbs
spices (cumin, oregano, pepper)

Mix everything together and form into 4 patties. You can either brush them with oil and bake them or cook them in a pan with olive oil (flipping once). Then enjoy!

*****I made them exactly as instructed. We ate them on bread since we didn't have any buns, with ketchup and mustard. I thought this would be a good recipe to have if you had to live off of food storage (if you have black beans in your food storage) if you didn't have access to or couldn't afford meat. I think that as long as you have the basic ingredients (beans, egg, bread crumbs) that you could use dried onions and whatever herbs you wanted or had on hand.

I would rate this at 3 stars. I will definitely make this recipe again, but it isn't really something that you could take to a potluck and isn't *wow* enough for a dinner party. My husband and I had to keep reminding ourselves that we weren't eating meat!

Even if you don't have bread crumbs, crushed crackers or cooking oats will work just as well.
