Terriyaki Chicken Sandwiches

Terriyaki Chicken Sandwiches

4 slices canned pineapple (save 2 tbsp of the juice)
(I always thought they were just called pineapple rings. Shows how much I know.)

1 1/2 tbsp soy sauce
1 1/2 tbsp honey
1 tbsp molasses
1 1/2 tsp lemon juice
1/2 tsp dijon mustard
1 clove garlic
2 tsp minced fresh ginger or 1/2 tsp ground ginger
1 1/2 tbsp olive oil
4 boneless, skinless chicken breasts, flattened
(I didn't flatten them. Oops.)
salt to taste
4 hamburger buns or sandwich rolls
Lettuce leaves

Lay the pineapple slices on paper towels, blot them dry, and set aside. In a small bowl, blend the reserved pineapple juice, soy sauce, honey, molasses, lemon juice, mustard, garlic and ginger.
(when the sauce has that many yummy ingredients, you can't go wrong!)
Add oil to a pan, sprinkle chicken with salt, and cook chicken over medium heat until chicken is no longer pink (about 5 minutes per side). Add sauce and cook another minute or two, spooning sauce over the chicken and turning to coat both sides.
Remove chicken from pan and immediately add pineapple slices. Cook about 30 seconds to a minute, coating both sides in sauce. Remove from pan. Lay lettuce leaf on bottom half of roll, then lay chicken on top of lettuce, then pineapple, then top half of roll. Enjoy!!! (You can also drizzle a little of the sauce on top of the pineapple before you put the top half of the roll on...YUM!!!)

I used wheat bolillo rolls, which were a little dry. But, that could've been because I've had them for a few days. ;) I thought these sandwiches were really good. My husband was even snitching leftover pieces of chicken & pineapple after dinner! The recipe says to put a piece of lettuce on the sandwich, but I thought it would taste just fine without it. I give it 4 stars!!

I made these tonight. They were good, except I used old Italian dinner rolls that needed eating. Too dry...yuck!
