Can I get partial credit?







I know that egg week is over, but I really did do it. I promise. (I'm starting to sound like the junior high kids I used to tolerate---er, teach.)

Eggs are a big deal at my house. Since we have eight hens, we seem to accumulate a lot of eggs.

Here's a pic of some of the girls last spring, just before they started to lay. We have four buff orpingtons (peach) and four barred rock (black and white). They lay brown eggs, which are super cool.

And so...I made a spinach quiche. I am replying to this message with the recipe if you are interested. My husband loved it, but we're weird like that. Remember the scene from Sixteen Candles where Molly Ringwald's family explains quiche to the foreign-exchange student? Yeah, me too.

Creamy Spinach Quiche

Crust: You can go with a premade pie crust, but I'm picky and prefer making my own.

Blend well
1 and 1/4 c. flour
1/2 t. salt
1/3 cup butter
4-5 T. cold water

Roll out and form the crust into a pie pan. You can get all fancy with the edges, but I can get kinda lazy with that. Do not prebake this crust.



Filling:
blend together
3 eggs
1/2 c. cheddar cheese (or whatever chesse you're jonesing for)
1/2 c. diced ham
1/4. c. drained spinach (I used canned, but you can go with any form)
1 T. dried onion (or use fresh if you have it. I didn't.)
6-7 ounces of cream cheese (light or regular)

Pour filling into uncooked pie crust. Bake at 350 degrees for 30-35 minutes.

This could work for a breakfast potluck. We all liked it. Four stars.
