Asian Chicken Salad Lettuce Wraps

serves 24

2 cups finely chopped chicken
4 medium green onions, diagonally sliced (1/4 cup)
1 can (8oz) sliced water chestnuts, drained, finely chopped
1/2 cup spicy peanut sauce
1 tablespoon chopped fresh mint leaves
1/4 teaspoon crushed red pepper flakes
24 small (about 3 inch) bibb lettuce leaves (about 1 1/2 heads)
1/2 cup chopped roasted salted peanuts

1. In a medium bowl, mix all ingredients except lettuce and peanuts.
2. Spoon about 2 tablespoons chicken mixture onto each lettuce leaf. Sprinkle with peanuts.

We really liked this, we as in me and my husband, too spicy for the kids. I wouldn't add the mint next time I make this. I couldn't find bibb lettuce so we used a regular head of lettuce and rolled them like little burritos. I used this for our main dish, it makes a ton, and served it with rice.
