Challenge Ingredient: Potatoes

Well, here we are at another week when I've forgotten to post the challenge on time. It's not that I'm too busy or too lazy...I'm really just that absent-minded. My hair isn't even blond!

This week we're cooking up potatoes. Potatoes have always been a favorite food of mine, and there are so many different ways to prepare them: baked, mashed, au gratin, hash browns, and fries, just to name a few. Unfortunately for me, my husband doesn't like them. He had them too often as a kid, and now he just wants pretty much nothing to do with them. He complains about them being flavorless. Sadly, for the first two and a half years or so that we were married, I rarely cooked potatoes at all, because I wanted to please him. Finally I decided that he could deal with it every now and then, and I've been making (and eating!) potatoes again the last year. And my husband eats without complaint. Without audible complaint. :)

I love potatoes! And lucky me, I've already got a new meal in mind for this week that includes potatoes. Score!

Me too! I looked at a few new recipes I wanted to try, and pulled an ingredient from one of them, and said "hey, maybe I'll make that the challenge this week!"

Oh sweet. I love potatoes, too. Hubby only likes red potatoes. Fortunately ... I like all potatoes. haha.
