PINEAPPLE GLAZED GRILLED PORK CHOPS

8 Medium Sized Pork Chops
1 Can Pineapple Rings (Save Juice)
1 1/2 Tbs Dark Brown Sugar
1/4 Prepared Mustard
2 Tbs. Lemon Juice
2 Tbs. Worcestershire Sauce
2 Tbs. Cornstarch dissolved in 1/4 cup cold Water

Drain pineapple and reserve juice. Salt an dpepper pork chops to taste. In a small sauce pan, combine pineapple juice, enough water to make 1 cup juice mix. Stir in brown sugar and mustard. Bring mixture to a light boil. Reduce heat and add lemon juice, worcestershire sauce, and cornstarch mix. Simmer for 3 minutes until sauce is thick, stirring constantly.

Brush sauce on pork chops and place on prepared grill. Grill on each side for about 2 minutes each until cooked through. Grill pineapple rings on grill as well. Place on top of pork and serve immediately.


** We had this last night for 2 reasons. First, I didn't want to go shopping for additinal ingredients and happened to have everything at home for this recipe. Second, who doesn't like a little BBQ in this beautiful Arizona weather?

This recipe is SUPER easy to make, and adds a good flavor to the pork chops. I would have reserved a little sauce to dip my chops in next time, but that is only because I like extra sauce on everything! My husband didn't like the pineapple cooked too much, but said the sauce was good. Natalie (my 2 year old) didn't try any and has once again decided not to eat meat of any kind. I wonder if she will grow up to be a vegetarian as the only meat she will ever eat is the pepperoni off her pizza!!!!

Anyways, good meal! Share with friends if you have a BBQ. Great with the traditional potatoes and vegie salad.

Oh, am I jealous of the Arizona weather right now. "Snow is falling all around" in the frozen North. This sounds yummy.
