BBQ Chicken Pizza

We love to make home made pizza but we are getting sick of pepperoni and olives, so I thought this sounded good.

Here is the original recipe:

Ingredients:
1 can of premade pizza dough
1 bottle of your favorite BBQ sauce
1 bag of pre-cooked chicken
1 bag of crumbled bacon
1 bag of shredded cheese (mozzarella or pizza blend)
1 bunch of cilantro
1 red onion
1 small bag of corn meal
Method:
Pre-heat grill to a low temp, around 350. Put a little corn meal in the bottom of the pan to help release the pizza a little easier. Place the pre-made dough in the skillet and spread evenly throughout the bottom of the skillet. Don't let the dough get too thick, keep pretty thin. Add a tablespoon of BBQ sauce to cut-up chicken and stir it in. Spread BBQ sauce and add the cheese, chicken and bacon. Bake on the grill for 12-15 minutes. Let cool and add cilantro to taste. Enjoy a fresh grilled pizza!

I decided to use a crust mix, layer on the ingredients (didn't use the corn meal), and bake it in the oven just like any other pizza. My little boys loved the chicken and the bacon.

I would defiantly use this for a causal dinner with our friends.

Do you sauté the onion first? When I make BBQ Chicken Pizza, I usually use green onion, because it's not as strong, but the red sounds yummy too. I like using Monterey Jack cheese when I've got it. Definitely one of my favorite pizzas!
